Back to Basics: Cooking with Black-Owned spices “Fulbe Fresh” as a Lifestyle

Early this year, Yvonne Orji posted to her Instagram page to confirm that she and Oprah Winfrey will be celebrating their partnership with Jollof Rice. Jollof rice is a well known as a celebration dish. All over West Africa, there are different versions of Jollof Rice in Nigeria, Ghana, Togo, Cameroon, Senegal, Gambia, etc.


The term “Black-owned eating” has taken a different meaning in the past year after a tumultuous period of trying to survive two pandemics – the COVID-19 crisis and structural racism that has led to the continuous murder of black people in America. 


As the days of quarantine and protesting in the U.S. drag on, it’s helpful to remember that people have always adapted their eating habits too difficult times. Eating black-owned is a lifestyle that needs to be the trend in this uncertain season to increase visibility for small black-owned businesses.
Jollof rice is a great dish that can help you get through these challenging times. In its basic (and shockingly delicious) form, Jollof rice is white rice — basmati or jasmine or brown rice — that’s been simmered in a sauce made from tomatoes, paprika, onions, and habanero pepper. They sometimes contain herbs such as thyme and Smokey paprika.


What makes Jollof Rice so special — it’s the black-owned spices like Fulbe Fresh and Iya Foods Jollof Seasoning used to prepare the dish. Fulbe Fresh recently launched different ingredients – Ground Curry, Cajun Spice, Hot Suya Pepper, Ground Rainbow Peppercorns, White Pepper, Rotisserie Chicken, and Jamaican Jerk Seasoning.

Ingredients ▹ 

For the blended mix 

  • 1-2 medium bell peppers (Also known as paprika) 
  • 5 pieces of tomato 
  • Garlic 
  • Ginger 
  • 2 scotch bonnet pepper (also known as Habanero chili/pepper) 
  • 1/2 onion 
  • Rice (used Brown Rice) 

For frying:

  • 1/2 cup vegetable oil
  • blended mix
  • Fulbe Fresh Curry
  • Iya Food Jollof Rice Seasoning
  • 1 large chopped onion
  • Tin Tomato paste ( optional)
  • 1 knorr seasoning cubes
  • 1 tablespoon thyme
  • 1 tablespoon curry
  • 1 tablespoon salt
  • 1 1/2 rich cup chicken/turkey stock( substitute with water)
  • 1 cup water

Preparation ▹ 

Prepare the blended tomatoes mix: 

Working in batches, combine all the blended mix (see ingredients) except the vegetable oil in a blender and purée on high until smooth. Add up to 1/4 cup of water if necessary to get the blended mix going.

Heat vegetable oil in a medium saucepan: Add half of the chopped onions and bring to a simmer. Prepare the tomato stew: Reduce heat to medium, pour the tomatoes into the heated vegetable oil. Add chopped onions until fragrant and translucent, about 2 minutes. 

Add your ingredients – onga, salt, Fulbe Fresh Ground Curry, Jollof rice seasoning, knorr, and stir the mixture properly. Allow it to simmer for 15 to 20. Then the tomato stew is ready!

Prepare the Rice:  Parboiled your Rice for 5-8 minutes. Reduce the heat in another clean pot and transfer your tomato stew. Start adding the parboiled rice and mix it thoroughly.

Add ingredients: Salt, Fulbe Fresh ground curry, thyme turmeric, Iya food Jollof Rice Seasoning, ground paprika, and add broth. Cover with foil paper and then cover with a pot lid. Leave to cook for 15-20 minutes. Cook the rice until it is tender. Uncover the cooked rice and mix it with a wooden spoon. Adjust seasoning, if necessary. Serve warm. Dish with some plantains, veggies and other sides.
