I am back in the kitchen, cooking and creating new Minnafropolis recipe. To be honest with you, beans is my least favorite food but I am always looking for new ways to cook it so I can enjoy eating it. I hope you enjoy this new recipe.



Ingredients
Brown Beans / Pinto Beans
1 1/2 Onions
Palm Oil
4 Tomatoes
2 Habanero Peppers
Knorr/ Maggi
Salt
Garlic
Ginger
Grounded Smoked Paprika
1 (red) Bell pepper
Thyme (optional)
Preparation
Step 1 : Portion out your beans in a tray. Pick out dirt & separate approved beans in a clean bowl.
Step 2: Rinse beans & pour it into the boiling water to start cooking. Leave you beans to cook for 30-40 minutes or more. The goal is to get the beans to be well cooked and soft.
Step 3 : Dice or chop 1/2 an onion. Chopped onion should be added to the cooking beans.
Step 4: A teaspoon of salt into the cooking beans. Step 5: While the beans is cooking, start blending your tomatoes, onions, garlic, ginger and habanero peppers. Blend it till it is smooth.
Step 6: Add palm oil to the HOT pan. Add 1/2 of the remaining chopped onion. Leave it to fry for 3- 5 mins.
Step 7: Add the blended tomatoes sauce into the pan.
Step 8: Add your favorite ingredients – salt, Knorr/Maggi, thyme, smoked paprika etc.
Step 9: Let the sauce to fry for 15 – 20 mins. Keep stirring to avoid it from burning.
Step 10: Add the fried tomatoes sauce into the cooking beans and stir properly. [ Note that the beans cooked for 50 mins in this video. It is very soft].
Step 11 : Use the back of the spoon to mash the beans a little bit. Now your beans is ready!
