This recipe was fun to create and I enjoyed preparing it .
Plantain is a rich food to add to your meal plan. Be creative with your plantain.
I present to you Canoe (Boat) Plantain Stuffed with Grounded Turkey .
Now let’s cook !
- 1 plantain for each serving (made 4 plantains)
- I lbs ground Turkey (you can use ground beef, ground veal, etc.)
- 1 cup of diced large onion
- 1 tbs of Salt
- 1 cup green pepper (optional)*
- 1 tablespoons of butter ( I can’t believe it is butter brand)
- 1½ cup diced long green pepper
- ½ cup diced red pepper
- 1 tbs Dried Thyme
You are going to need a painting brush
Spray the oven pan or baking tray with a non-stick cooking spray.
Pre-heat oven at 350ºF or 175ºC.
Peel the plantains (and rinse it if needed). Then place them in the oven tray.
Melt butter for less than 1 minute and add dried thyme. Stir everything together.
Paint the plantain with the mixture.
Place the plantains in the oven for about 15-25 minutes.
In between remember to turn the plantains over to the other side after 10 mins approximately and keep it in for an additional 10 mins or more until they are golden brown (or to your desired taste ).
Prepare the stuffing:
In a frying pan over medium/high temperature, add little butter.
Add onions, add grounded turkey, green pepper, spinach and let it cook until brown (stirring continuously) for 5-8 mins.
Make a slice from one end to the other on the plantain, deep enough to cut inside the center.
When the plantain opens, begin to stuff it with the ground turkey mixture. Fill it up to you are satisfied.
It is time to eat !
